2 cups flour
1/4 cup sugar
1 Tbs. baking powder
1/2 tsp salt
6 Tbs butter or shortening
1/4 cup milk
2 Tbs honey
1 egg
Sift the dry ingredients. Cut in
butter till crumbly. Mix the egg , milk and honey. Stir into crumbly
mixture. Knead briefly on floured surface. Pat into a 9 inch circle, cut
into wedges. Bake on greased cookie sheet 400F 12 to 15 minutes or done.
Then remove and brush with more honey while hot.
Amanda's notes:
You can
omit the salt if you like and these still turn out fine. I tend to be lazy
about mixing ingredients separately before combining into one big bowl (I
don't sift the dry ingredients, for example) but you do need to mix the
egg, milk and honey thoroughly so that the honey dissolves. The scones do
not suffer from putting extra honey in them - I've upped it to 3 Tbs in
the batter but then not brushed the tops to get the extra honey taste
without all the stickiness.
