RECIPES
Recipes of various items that have been served at meetings

Served with The Gospel According to Jesus Christ.

A. marinate:

2 C pork tenderloin --ground, or cut into "strings"-- or ground turkey 
1 tbs soy sauce 
1 tbs corn starch 
1/2 tabs sugar 
1 tbs vegetable oil

B. 
1 tbs finely chopped garlic (or maybe 6 cloves of garlic) 
1 tbs finely chopped ginger 
2 tbs or more finely chopped scallions

C. do NOT overchop!

8 oz chopped water chestnuts 
1 1/2 C chopped wood ear (soft kind) [soak and clean]

D. sauce:

1/2 tsp black pepper 
2 tsp sesame oil 
1 tbs cooking wine 
3 1/2 tbs soy sauce 
3 tbs hot bean paste [*] 
5 tbs vinegar 
2 tbs corn starch 
3 oz water

E. 3 C vegetable oil

1. 1 C of vegetable oil heated in frying pan. Add A ingredients; stir fry a short time. Drain off oil from pan; remove contents and put aside.

2. Leave 1/3 C oil in the pan and stir fry B ingredients.

3. Add C ingredients and stir fry a little while.

4. Add A ingredients (from step 1) and stir to mix thoroughly and quickly.

5. Add prepared sauce (D ingredients); stir evenly until sauce thickens.

Note: Cut each of the pork strings, chestnuts, and wood ear ingredients into even size so they cook evenly and look nice and pretty.

* Hot sauce: Kuang Ta Siang brand Hunan hot red pepper paste (made in Taiwan, comes in 4 oz glass jars)

You can also use Geo Chan's Delightfully Hot sauce, but use the hot version (not the mild(er) versions) -- you might want to use a bit less of this one!

Or use another, and adjust quantities as appropriate!
