Recipes of various items that have been served at meetings

1 lb ground beef
1 can tomato sauce
2 cloves garlic
1 can pinto beans or black beans
1 large white onion
1 Jalapeno pepper (add another one for hot hot, add a Habanero pepper for super-duper hot)
2 tsp cumin
2 tsp chili powder
Tabasco sauce to taste
salt to taste

Brown the ground beef in a stew pot or dutch oven over medium-high heat. Add the garlic, crushed, and half the onion, diced. Drain the fat and return the pot to the fire. Add the can of tomato sauce. You can also cut up a tomato and throw it in there for a little texture, but don't overdo it on the tomato products. Add salt, cumin, chili powder and tabasco. Remember, tabasco gets hotter as it cooks. Chop and add the rest of the onion. Cut the peppers in half lengthwise and remove the seeds and pulp. Roast the peppers in the oven, or my preferred method, right on the burner. Peel and chop the peppers and add them to the mix. Bring it to a boil, then lower the heat and let it simmer for one hour. Wash your hands after handling the peppers, and don't rub your eyes! After one hour, add the beans, and simmer, covered, for another hour. Serve hot and top with shredded colby or jack cheese. For maximum enjoyment, forget the spoon and use tortilla chips instead.
